Metodo Classico Brut Nature

Grape variety: Pinot Nero and Chardonnay
Refinement: 42 months on the lees

Vineyard: The grapes come from vineyards located in Fontanile and Castel Boglione.

Vinification: After careful selection, the grapes are handharvested and placed in small crates, reaching the winery within a few hours. They are loaded into the press without the use of pumps, and only the free-run juice (mosto fiore) is obtained. The must is cold-settled and then fermented in small oak barrels. The resulting wine is left to mature on its fine lees until the tirage. Secondary fermentation and subsequent bottle aging continue for at least 42 months before disgorgement.

Pairing: Perfect as an aperitif, but also suitable throughout the meal when paired with shellfish and white meats.

NOSE

Fresh and intense on the nose, with aromas of brioche and citrus notes.

VIEW

Fine and persistent perlage. Deep straw-yellow color with slightly amber hues.

On the palate it is bold and well-balanced, with extraordinary freshness.

History

The Tenuta Olim Bauda brand was born in 1961, but the union between our family and the world of wine has earlier origins. Giovanni Bertolino received his licence to produce “𝐕𝐢𝐧𝐢, 𝐒𝐩𝐮𝐦𝐚𝐧𝐭𝐢 𝐞 𝐕𝐞𝐫𝐦𝐨𝐮𝐭𝐡” in 1927. Almost one hundred years after obtaining the first production licence, our family has decided to pick up the threads of the portfolio that has distinguished us in the wine world for generations.
